A take off from the Austrian Linzer cookie, but ours is Nut Free. This sandwich cookie is a version of the Austrian linzer torte. The linzer torte, named after the city of Linz, Austria, the Linzer cookies mimic the tart by sandwiching raspberry jam between two rich gluten-free cookies. The filling is made with local seedless raspberry jam. A great treat anytime or with afternoon tea/coffee.
